OPTIMALIZATION OF UNFEASIBLE RICE TO RICE SUGAR BY HYDROLYSIS METHOD TO ENHACE FARMER WELFARE

Unfeasible rice is one of the problems in food logistics Indonesia. This unfeasible tends to make farmers or BULOG losers because they have sell it at a cheaper price turn into animal feed. The characteristics are many breeds lice, yellow color, musty smell, and overgrown with fungus. Based on data, 100 grams contains 0.1 sucrose (C12H22O11). Sucrose double sugar molecule (disaccharide) that can be broken down simple sugars (monosaccharides) through enzymatic reactions. Monosaccharides utilized by humans as main energy source. shows not suitable for consumption used an alternative raw material making sugar. Therefore, idea innovation was born study aims determine ratio optimum reaction time hydrolysis unfit using alpha amylase.
